Creamy Tuscan Shrimp Farfalle  Ingredients: *   1 lb Jumbo or Extra Large Shrimp -  Raw, peeled & deveined  * 1 lb Farfalle Pasta  * 3 Tbsp Butter  * 1 Tbsp Olive Oil  * 2 Tbsp Italian Seasoning - Divided * 1/2 tsp Kosher Salt  * 1 tsp Black Pepper * 2 Shallots - Minced * 6 Cloves Garlic - Minced * 1/2 Cup White Wine * 1 1/2 Cups Heavy Cream  * (2) 15oz Cans Fire Roasted Tomatoes  * 5 oz Baby Spinach  * 1 1/2 Cups Romano or Parmesan Cheese - Grated  Directions:  1. Bring a large pot of water to a boil. When it comes to a boil, add salt & drop the pasta. Cook until a minute under Al dente.  2. While the pasta cooks, season the shrimp with 1 Tbsp of the Italian seasoning.  3. Heat the butter in a large skillet with high sides over medium heat. Add the shrimp, and cook for two minutes on each side. Remove from the pan, cover and set aside.  4. Add the olive oil to the pan, followed by the shallots & garlic. Cook for 45-60 seconds & then deglaze the pan by adding in the wine. Cook for 3-4 minutes.  5. Stir in the heavy cream, tomatoes, salt, pepper, remaining 1 Tbsp of Italian seasoning & the spinach. Combine well & cook for 4-5 minutes.  6. Add in the shrimp, and the cheese along with the cooked farfalle.
