INGREDIENTS (Makes 25) Rice cakes - 200g rice flour - 20g tapioca starch - 1 tsp salt - 250ml room-temperature water - 300ml boiling water - 1 tbsp vegetable oil Shrimp floss - 50g dried shrimp - 300ml water - 1/2 tsp sugar - 1 tsp fish sauce Scallion oil - 30g green onion greens - 3 tbsp vegetable oil Pork crackling - 25 pieces pork crackling (chicharrones) Sauce - Broth from boiling the shrimp - 1 tbsp fish sauce - 1 tsp white granulated sugar DIRECTIONS 1. Soak dried shrimp in warm water for 30 minutes. 2. Add rice flour, tapioca starch, and salt to a large bowl along with room-temperature water and whisk until smooth. 3. Add in boiling water gradually while whisking continuously until fully combined. Cover and let rest for at least an hour. 4. Chop up green onion greens. 5. Heat a small pan on medium and add oil. 6. Once the oil is simmering, add diced green onion and sauté for 1 minute. Pour the scallion oil into a small bowl and set aside. 7. Add the shrimp to a pot along with water. Bring to boil on medium, cover, and cook for 5 minutes. 8. Strain shrimp broth into a bowl and set the shrimp aside. 9. To the shrimp broth, add fish sauce and sugar. Stir to dissolve sugar and set aside. 10. Add shrimp to a food processor/blender and pulse. 11. Heat a pan on medium, add the blended shrimp along with fish sauce and sugar. 12. Cook for about 5 minutes, stirring continuously until dry and fluffy. Pour into a bowl and set aside. 13. Add water to steaming pot and place the steamer basket on top. 14. Arrange the ceramic dishes inside the steamer, add the lid, and bring to boil on high. 15. Reduce heat to medium high and set timer for 10 minutes. 16. Add vegetable oil to the rice flour batter and whisk. 17. Pour enough batter in each ceramic dish to create a ~1cm layer. 18. Cover and steam for 8-9 minutes. 19. Remove the dishes from the steamer and let them sit for another 2-3 minutes. 20. Assemble by adding some shrimp floss, scallion oil, and a piece of crackling on top of each rice cake. 21.
