These beans are hands down one of my favorite lazy, one-pot weeknight meals during the cold weather. They’re saucy, herby, citrusy, a little bit funky, and all around BIG on flavor with very little clean-up needed. 2 16 oz cans gigante or butter beans, drained & rinsed
1 tbsp neutral oil
1/2 can green curry paste
2 1/2 cups full fat coconut milk
1/4 cup brown sugar
3 tbsp fish sauce or vegan alternative
Juice from 1/2 lemon, plus additional as needed
1 tsp diamond crystal kosher salt, plus additional as needed
1 packed cup Thai or regular basi
1 packed cup spinach
Garnishes of your choosing (cilantro, chopped chili peppers, and crushed peanuts are all delicious) Cutting Board @boardsbyshore
