A light and flavorful summer dinner featuring tender grilled chicken with fresh vegetable medley and protein-rich quinoa. Ingredients: - 2 boneless, skinless chicken breasts - 2 tablespoons olive oil - Juice and zest of 1 lemon - 2 garlic cloves, minced - 1 teaspoon dried oregano - Salt and pepper to taste - 1 cup quinoa - 1 cup cherry tomatoes, halved - 1 medium zucchini, sliced - 1 yellow bell pepper, sliced - 1 small red onion, sliced - Fresh basil for garnish Instructions: 1. In a bowl, mix olive oil, lemon juice and zest, minced garlic, oregano, salt, and pepper. Marinade chicken breasts in this mixture for at least 30 minutes. 2. Cook quinoa according to package instructions. Set aside. 3. Preheat grill to medium-high heat. Grill marinated chicken until fully cooked, about 6-7 minutes per side. 4. While chicken cooks, sauté zucchini, bell pepper, and onion in a skillet with a little olive oil until tender, about 8 minutes. 5. Assemble the vegetables on a serving plate. Once chicken is cooked, let rest for a few minutes, then slice. 6. Serve grilled chicken slices over the vegetable medley, with quinoa on the side.
