@ithinkican_cook: Spinach & Artichoke Dip! Ingredients: Fresh Spinach - 3 large bags (really however much you prefer) Garlic - 20 cloves Olive oil Cream Cheese - 16oz Sour Crean - 1c Mozzarella - 1.5lbs Sharp Cheddar - 8oz Artichoke Hearts - 2 - 14oz cans @MaD Seasoning Seasoning Salt Directions: 1. Start by adding your garlic cloves (for this I just use the pre-packaged peeled ones) to an oven safe bowl. Fill with olive oil until the cloves are just covered. Bake at 400 degrees until the cloves are roasted (20-25mins) 2. Finely chop the two cannot artichoke hearts 3. Add spinach into a pan one bag at a time and cover on medium heat. Check every 5mins and mix as the spinach wilts. Once the first bag of spinach has shrunk down add in the second and do the same. One it has wilted then use some kitchen shears to cut up the spinach. 4. To a large bowl add in two block of cream cheese, the sour cream, artichokes, drained spinach, roasted garlic, the cheeses and seasoning salt. Reserve some of the cheese for the top. 5. Bake at 400 for 20-25mins. Once cheese on top is starting to get toasted throw on the broiler until top is nice and crispy.
