Apple Pie 🍎🥧 Pie Crust: - 2 1/2 cups flour - 2 tbsp sugar - 1 tsp salt  - 1 cup cold butter, cubed - 8-12 tbsp ice cold water Filling: - 6 red apples - 1/4 cup brown sugar - 1/2 cup sugar - 2 tbsp lemon juice (~1/2 lemon) - Zest of one lemon - 3 tbsp flour - 4 tbsp butter - 1 tsp cinnamon - 1/2 tsp nutmeg - 1/2 tsp ground ginger - 1/4 tsp allspice - 1/4 tsp cardamom - Pinch of salt - For the pie crust, combine flour, sugar, salt, and butter. Mix by hand until the mixture turns into even-sized pieces of crumbs. Slowly add 1 tbsp of water at a time, while kneading the mixture by hand, just enough for the dough to come together a little bit. Wrap in plastic wrap and refrigerate for 30 minutes.  - For the filling, core and peel the apples. Cut them into slices or cubes (personal preference of texture). Combine the ingredients in a pot and mix over medium heat until the apples soften and the liquid simmers down to a sauce.  - Divide the dough into 2 balls: 400g for the bottom layer, 300g for the top layer (my dough came out to 700g so this is how I divided it) - Roll out the bottom layer dough, lightly flour, and roll onto your pie dish. Press the dough down to mold into the dish. Refrigerate for 5 minutes before cutting the excess dough off for a cleaner cut.  - Pour in the filling and spread evenly.  - Roll out the top layer dough and cut into even strips.  - Lay down the strips parallel to each other. Fold back every other strip. Place one long strip of dough perpendicular to the parallel strips as shown. Unfold the folded strips over the perpendicular strip. - Take the parallel strips that are running underneath the perpendicular strip and fold them back over the perpendicular strip. Lay down a second perpendicular strip of dough next to the first strip. Unfold the folded parallel strips over the second strip. - Continue this process until the weave is complete over the top of the pie. Refrigerate for 5 minutes before trimming excess dough.  - Brush the top with egg wash (optional: sprinkle sugar on top crust) - Bake on the lowest shelf at 400F for 40 minutes.
