Toasted Marshmallow Ice cream This is one of my favourite ice cream flavours. The toasted marshmallow really comes through and works perfectly either on its own or with chocolate and graham crackers to make the ultimate frozen S’mores dessert. Either way, give this a try and let me know what ya think. For me, this was a #gamechanger making ice cream with high-quality @OntarioDairy  Ingredients: 500ml Ontario Milk  500ml Ontario 35% Cream  2 heaping tablespoons white sugar 5 egg yolks  250grams marshmallows  Garnish: 1/2 cup graham cracker crumbs Sauce: 1/4 cup chocolate chips 1/2 cup Ontario 35% cream  Method: For the Toasted Marshmallows Ice Cream: 1. First, add your 5 egg yolks to a large bowl and set aside. 2. In a medium-sized pot, add your Ontario cream, milk, sugar, and vanilla. Bring this up to a simmer ensuring all sugar has dissolved.  3. While whisking your egg yolks aggressively, add 1/3 of your hot liquid to the eggs very carefully and slowly. This process is called tempering and ensures you won’t make scrambled eggs.  4. Next put the liquid back into the pot and bring it back up to a simmer one more time while stirring continuously.  5. Place your marshmallows on a metal baking tray and toast with a blow torch. If you do not have a blow torch, place them in your oven at 400F until the marshmallows start to toast to your liking.  6. Add the marshmallows to your blender and slowly pour in your liquid. Only add enough to get the marshmallows blended smoothly. Then pour all the liquid into a large bowl and place in the fridge until fully chilled and ready to churn.  7. Add your cream base to your machine and allow to churn until it’s at a soft serve consistency. Place in an airtight container and place it in your freezer to allow the ice cream to set. For the Sauce: 1. Add your chocolate chips to a small bowl. 2. Bring the cream up to a simmer and pour over your chocolate. 3. Let sit for a few minutes allowing the cream to melt the chocolate. Mix until smooth.
