MaitreD won’t fill up a Res List for this very reason. On the flip, the mindset is you’ll tip them good for that “last minute hot seat”. This was back in 05-06 when I worked Res Line at the Hilton.

Never hurts to just ask if there’s a table. You may occasionally get laughed at but there are always last minute cancellations or bar seats.

The last time I was in Vegas we strolled in lit up after drinking all day, and had the BEST drunk meal. It was expensive but so good.
