@emthenutritionist: CHRISTMAS PASTA SALAD. BACON, WALNUT & BLUE CHEESE. A take on my granny’s most famous starter in her restaurant, it also makes a phenomenal pasta salad. You will need to serve 2 120g dry-weight pasta 4 slices of smoked streaky bacon 120g shredded turkey or chicken 2 tbsp dried cranberries 80g crumbled stilton Handful of rocket 60g granary breadcrumbs (i blitzed some granary bread) 1 banana shallot handful walnuts, chopped 1 tsp Dijon mustard (or wholegrain if you dont like it strong) 1 tbsp honey 2 tbsp red wine vinegar 1 tbsp Greek yoghurt or mayo Crisp up the bacon in a frying pan until golden and place onto a paper towel to drain. Add in the shallot and walnuts, saute for a few minutes, then add in the breadcrumbs to toast. Make sure it doesn’t burn. Set to one side. Boil the pasta in salted water until cooked, not al dente! or you have a hard pasta. Drain and set to one side, reserving 1-2 tbsp pasta water. Make the dressing by mixing the mustard, honey, vinegar, mayo and pasta water. Chop the bacon into pieces. Toss the pasta with the bacon, cranberries, stilton, rocket, and dressing. Sprinkle over the breadcrumbs to serve. #christmas #pasta #festiverecipes
