Stream in milk bit by bit ~500ml and once bubbling, slowly add in your grated cheese ~150-200g. Stiry to emulsify, season, then set aside 10. Check the beef. It should be ultra tender! Remove and set aside 11. Strain and reduce the braising liquid by half until slightly thickened - season to taste 12. Shred your beef and add in a few ladles of the reduced sauce 13. Assembly: add your  Doritos Dippers to a large baking tray and sprinkle over some of the cheese 14. Top with your beef, a drizzle of cheese sauce, caramelised onions, more cheese and fresh jalapenos - repeat this for one more layer 15. Bake at 180c for 10-15 mins until melted and delicious, then top with a little more cheese sauce, your crispy onions, fresh jalapenos and chopped chives! 16. Optionally, pair this with an ice cold Pepsi! - This ones a beauty. The layering steps are important to ensure your Doritos maintain their beautiful crunch!
