@thecornerplot: I absolutely love making and sharing a big focaccia with my family and friends. This one is on the menu for our Christmas celebrations.  Who wants a slice?  600ml tepid water 15g caster sugar 1 sachet dried yeast 8 tbsp extra virgin olive oil 700g strong bread flour 10g sea salt flakes, plus extra Your favourite cheese, cubed Rosemary sprigs Mix half of the water with the caster sugar and yeast, stir well. Leave for 10 mins then add the rest of the water and 2 tbsp of the olive oil.  Mix the flour and salt in a food mixer, pour in the yeasted water and mix using a bread hook for 10 mins or until the dough starts to come away from the sides of the bowl. The dough should be very sticky.  Line a high-sided baking tin with baking parchment and drizzle over 2 tbsp of the olive oil. Pour the dough into the tin and (using damp fingers) fold it from top to bottom, left to right. Leave to rest for 5 mins, then repeat a couple of times. Cover and leave to rise for 1-2 hours.  Once the dough has doubled in size, preheat the oven to 220 C. Break the cheese into cubes and gently push into the dough.
