Favorite easy dinner 🇲🇽 Salsa and Beans Recipe: Salsa Ingredients 4 tomatoes 5 chiles serranos 1 garlic clove Salt to taste Process: Broil tomatoes and chiles serranos on high heat for 15 minutes (or on a comal for 20-30 minutes) until skin is easy to peel from tomatoes In a molcajete, crush garlic and salt until a paste is formed, then crush chiles serranos, remove skin from tomatoes and crush as well until salsas desired consistency is reached ! This can totally be done in a blender or food processor, but the flavors come out much more when using a molcajete 😊 Beans ingredients 2 ½ cups Peruvian Beans 5-6 cups water as needed Salt to taste 4 tbsp Corn or Vegetable oil Process: Wash and drain beans, add water, boil on medium high heat for 1 hour, checking to make sure they haven’t absorbed all their water, keep adding water as cooking time progresses After an hour add salt, make sure there is still plenty of water, and boil another 45 minutes to an hour, they are ready when the beans are tender In a separate large pan add oil and set to medium high heat, drain beans, reserve some of the beans caldito/water, add the drained beans to the hot oil and quickly crush them, the oil will jump and it will be hot but you’ll be okay, if you’re uncomfortable with this you can use a lid to shield some of the jumping oil Crush the beans and you can add some of the beans water/caldito if you want the texture to be runnier! I wanted thicker paste so I didn’t add any And done ! To complete the dinner serve with queso cotija, chicharrones, avocado and tortillas 😊
