Add the roasted vegetables to a blender with seasonings to taste (chicken bouillon) and 1/3 cup water. 3. Chop the remaining vegetables and chicken into 1 inch pieces. 4. Grease a pan with avocado oil spray and add the chicken. Cook for 4-6 minutes and season with salt, pepper, and 2 minced garlic cloves. 5. Add in the sliced onions and cook for 2 minutes. 6. Add in the potatoes and salsa. Mix well. 7. Cover and cook for 7 minutes. 8. Mix in the zucchini and cook for an additional 12-13 minutes or until all vegetables are cooked through. 9. Divide the meal into 4 equal servings (~1.25 cup of guisado) and serve with toppings and/or sides of choice. 10.
