This recipe is a safe and tested recipe (important!) from the Ball Book of Canning (linked in my product highlight), and it’s one of my favorite ways to preserve an overabundance of peppers! Im a spice lover, so I just kinda mix everything together. This was a blend of banana peppers, habaneros, jalapeños, poblanos, bell peppers, etc. It’s still kinda spicy, but the vinegar really kills the heat. So according to your spice tolerance, formulate whatever mix of peppers you want! Here’s the recipe, it will make 4-5 pint jars depending on how much you pack them: 11 cups sliced peppers 6 cups white vinegar 2 cups distilled water 3 cloves crushed garlic (can leave it in or take it out after boiling) Prepare jars, lids, etc. combine vinegar, water and garlic and bring to a boil. Boil gently for 5 mins until garlic is infused. Pack peppers into jars and ladle brine in leaving 1/2 inch headspace. Wipe rims, add lids and rings and process in canner for 10 mins.
