I’ve been vegan & plant based since 2015! It’s crazy that I’ve been on this journey for 10 years now!😭🌱 In this time I’ve figured out my go to meals and favorites that fuel my body but don’t require a whole lot of work in the kitchen. If you’re just transitioning to this lifestyle, don’t make it harder than it has to be by trying to make these complicated meals with 50+ ingredients. Stick to the basics and you’ll be good.👍🏽 🌱 Veggie bowls➡️ I LOVE a veggie bowl with a good sauce. You honestly forget you’re eating so many veggies with a good creamy sauce. My favorite is tahini & maple based. 🌱 Curry➡️ Chickpea curry is always on repeat in my household because it’s easy to make and you can add whatever protein you like if you don’t want to use chickpeas. Other white beans or pea protein based chicken like @Abbot’s works too. 🌱 Casseroles & bakes➡️ Plant based bakes like lasagna or pasta bake (you can use gluten free or kamut based pasta) are easy to pop in the oven and have all your veggies in it! 🌱 Creamy cashew pasta➡️ Cashews & coconut are the best combination in pasta sauces! You blend them in and it gives you that creaminess you would get from dairy. 🌱 Sandwiches with soy free tofu➡️ I get my soy free tofu from @Big Mountain Foods and it’s really easy to sauté and put on a sandwich with avocado, tomato, microgreens, and more! If you don’t already know, in addition to me and my fiancé being vegan, we raised our daughter on a plant based diet as well. We eat almost the same meals with her being 4 years old now.  If you need help with healthy plant based meals for your toddler & family, I now have a cookbook filled with over 50+ plant based meals as that my daughter loves!
