Macro-Friendly Sheet Pan Quesadillas Per quesadilla (12): 430 Calories 45g Protein 27g Carbs 14g Fat Saw this recipe on my feed by @Samantha Bauchmann and had to put my own spin on it! An amazing concept for quickly prepping a big batch of quesadillas, perfect for feeding a group/family or for meal prep 🤌 Ingredients: 48oz boneless skinless chicken thighs Season evenly with: Salt, garlic, onion, smoked paprika, chili powder OR taco seasoning Air fry at 375 for 15 minutes OR Bake at 450 for 15 minutes 200g 2% cheddar 200g fat free cheddar 200g 0% Greek yogurt 1 can corn, drained 1 can of diced tomatoes + green chiles 1 tablespoon apple cider vinegar 3 tablespoons red enchilada sauce 1 diced white onion Handful of chopped cilantro Salt/garlic powder to taste 12 burrito sized tortillas (I used Counter Protein tortillas, which are 200 cals each. Adjust cals based on tortilla you use!) Bake at 450 for ~30 minutes or until cooked to desired crispiness. Let cool for at least 10 minutes before slicing. IF using this for meal prep - I recommend slicing, then placing entire sheet pan in the freezer to “flash freeze”, then transferring to meal prep containers of choice. Reheat by simply microwaving 2-3 minutes, and air fry/bake to add some crisp if desired 👌 #stealthhealth #mealprep #macrofriendly #healthyrecipe
