Harees (هريس) Ingredients: - 1 cup of good quality ghee - 3 onions - 800 grams lamb ( bone in ) - 3 bay leaves - 5 cardamom pods - 1 tbsp peppercorns - salt to taste - 1 cup of harees ( peeled wheat) soaked overnight - 5 cups of water - start by searing the lamb with a tbsp of ghee along with an onion and the aromatics for a couple of minutes. - add the soaked wheat and 4 cups of water. Once it releases any foam remove it to keep it clean. - let it boil for about 10 minutes. Drop the heat to a simmer. Cover and let it cook for at least 2 hours. ( 1 hour in the pressure cooker with no mixing) - keep stirring the pot every 15 minutes so it doesnt stick as the wheat will release a lot of starch. - once the meat is soft and tender remove the bones. Season with salt and gradually add 3 tbsps of ghee whiling mixing the pot. - the consistency varies depending on how soft/ chunky you want it to be. I keep it quite chunky. - slice the 2 onions and saute them in 1 tbsp of ghee on low till nice and caramelized. Add the onions to the pot. Mix them in for about 5 minutes till fully incorporated into the harees. - serve the a harees on a large flatish plate. Place a small plate in the middle with the rest of the ghee melted. - garnish with optional chili and enjoy.
