Creamed collard greens with spicy southern fried catfish This was the most comforting soul food meal ive had in FOREVER! When I see collard greens, my mind immediately goes to soul food. I’ve been eyeing these collards all winter plotting what meal I was going to make with them- and when I tell you this did NOT disappoint!  For the catfish: Soak catfish in buttermilk for 1-6 hours to help get rid of that notorious catish “muddy” taste. This really helps, but it is optional. Next, marinate catfish with yellow mustard, hot sauce, cajun seasoning, garlic powder, salt, pepper, paprika, whatever spices you fancy, and an egg. This is soul food, so measure all of this with your soul. Next, coat the catfish in a fish fry batter (I used Zatarains) mixed with a little bit of all purpose flour. Then fry for 8-10 minutes in vegetable oil at 350 degrees Fahrenheit. Cool on cooling rack.  For the creamed collards (serves 4):  1 head of collard greens, ribs removed and cut into strips  2 tbsp unsalted butter 2 large shallots, finely chopped 1.5 tbsp all purpose flour 1.5 tsp sweet paprika 1 cup whole milk 1 cup heavy cream Salt & pepper to taste Blanch collard greens in large pot of boiling water for about 4 minutes. Transfer to an ice bath to cool, squeeze dry and set aside.  Heat butter in a cast iron skillet, and sauté shallots until soft, about 5 mins. Add flour and paprika, stir for 2 more mins. Add in cream and milk, bring to a boil, then lower to a simmer and add in greens. Simmer, stirring often, until sauce thickens, about 30 mins.
