Clean and thoroughly pat dry the corn. Slice the kernels off of the cob and add to a medium bowl. To help with slicing, you can place a small bowl upside down in a large bowl. Hold an ear of corn steady on top of the small bowl as you carefully slice in a downward motion, so the kernels are collected into the surrounding larger bowl. Should be about 350 grams of corn.   2. In a large skillet over medium heat, melt the butter. Add the corn to the skillet and season with the salt, black pepper, granulated garlic, granulated onion, and smoked paprika. Cook corn for 5 to 7 minutes, stirring frequently, until slightly browned and golden. Transfer to a medium bowl to cool completely.   3. In a small bowl, mix together the cotija cheese, mayonnaise, sour cream, cilantro, minced garlic, Tajín, sugar, and lime zest. Once the corn has cooled completely, add the cotija mixture to the bowl with the corn and mix well. Taste and adjust the seasonings with more spices and sugar to your preferences.   Make the Chipotle Cream Sauce 4. In a small bowl, mix together the mayonnaise, sour cream, adobo sauce, lime juice, and salt.   5. Spoon corn into a serving bowl and drizzle the chipotle cream sauce over the top. Serve with tortilla chips. #royaleeats
