1 Roast Chicken = 3 Dinners RECIPE 3: Cheesy Cajun Chicken Sliders This is the final recipe in my new mini series, showing you how to make 3 dinners, feeding 4 people...from just 1 roast chicken!! Add the onion and fry for 5 minutes. Stir in the tomato puree, cajun spice and honey and fry for a further minute. Stir in the roast chicken, frozen sweetcorn and half of the water. Bring to the boil on a medium heat and simmer for for 2 or 3 minutes, breaking up the chicken gently with a wooden spoon as you stir. Simmer until the water is absorbed and the chicken is starting to break up. Stir in the remaining water and season with salt and pepper. Simmer for another couple of minutes until the water is absorbed and the chicken is heated through. Place the bottoms of the 4 brioche buns on a baking tray. Divide the chicken between them. Top with grated cheese and place the lids on the buns.
