Chocolate peppermint cookies🤍 think thin mint meets Christmas🎄 YOU WILL NEED:  •1/2 cup salted butter (softened at room temp) •1/2 cup sugar (+ some extra for later on) •1 egg •1/2 tsp vanilla extract •1/4 tsp mint extract  •3/4 cup flour  •1/3 cup unsweetened cocoa powder  •1/2 tsp baking powder  Chocolate peppermint Coating: •melting chocolate wafers/chips  •oil to thin chocolate out  •mint extract  •crushed candy canes TO MAKE COOKIES: In a large bowl, mix the butter on medium speed using a hand held/ stand mixer. Add in the sugar & mix until fluffy. Mix in the egg, vanilla extract, & mint extract. Gradually add in flour, cocoa powder, & baking powder until thoroughly mixed. The dough should be sticky & wetter compared to other cookie doughs. Cover the bowl with plastic wrap & leave in fridge for a few hours until chilled. Set up baking sheet & preheat oven to 350 degrees Fahrenheit. Roll dough into small balls, about 1/2 inch wide. Press the bottom of a glass into sugar & press down evenly onto cookie dough ball until flat and round. Keep coating bottom of glass with sugar each time you press a new cookie. Place extra dough back in fridge. Put in oven for 8-9 minutes, then take out & set on cooling rack. Repeat until all dough is used!  FOR THE CHOCOLATE COATING: Add in about a cup of unmelted chocolate wafers/chips, 1-2 tbsp of oil & 1/8 tsp mint extract. Melt the chocolate first, then mix in oil and mint extract. Coat cookies, place on parchment paper, and top with crushed peppermint. Then place in freezer for 10 minutes to let them harden.
