POV: if crêpes & tiramisu had a baby 😍 Crêpes (Makes 20): * Crack 8 eggs into a large mixing bowl, add 64 grams melted butter (cooled slightly so the eggs don’t scramble), 3 tablespoons vanilla essence & a double shot of espresso. Whisk until combined.   * Add 900ml milk, 2 ⅔ cups of all-purpose or cake flour & 8 tablespoons white granulated sugar. * Whisk together until combined.  * Pour the mixture through a strainer to remove any lumps.  * On medium heat, add a ladle of the batter to a crêpe pan. Allow to cook until bubbles form & the edges lift. Carefully flip & allow the other side to cook for a few seconds. * Set all the crêpes onto baking paper & allow them to cool completely. Tiramisu filling: * Add 2 egg yolks & 2 tablespoons white granulated sugar to a medium bowl. * Fill a smaller bowl with boiling water & place under the bowl of eggs & sugar - this will temper the eggs allowing them to cook (kinda like a double boil method). Whisk the egg yolks & sugar over the boiling water until smooth & creamy. * Remove the bowl of boiling water & to the eggs, add in 250 grams mascarpone & 1 teaspoon vanilla essence. * Whilsk together until combined - it should be thick & creamy. * To another bowl, add 250ml fresh cream & whisk until stiff peaks form. * Fold the mascarpone mixture with the whipped cream. Assembling: * Once the crêpes are cooled, place one at a time onto a plate/cake platter & spoon some of the tiramisu filling over. Spread the filling over the entire crêpes using a spatula or the back of a spoon. * Place another crêpe over & continue this process - there should be 15 crêpes used altogether. For the final topping you may spread the filling over or pipe blobs around the edges like I have - use the back of a spoon to join the blobs to the center to create a flower pattern & swirl in the center. * Dust the top layer with about a teaspoon of cocoa powder. * This can be served immediately or if you want the filling to set a bit then refrigerate until set to your liking. * Enjoy!  #eatmeerecipes #crepes #tiramisu #pov #crepecake #southafricatiktok #desserts #nobake #recipesoftiktok
