4 ingredient chocolate peppermint fudge! it’s gluten free, dairy free, and high protein, and can even be made sugar free. Ingredients: •9oz dark or semi-sweet chocolate (I like to use dairy free and refined sugar free chocolate — use sugar free or unsweetened chocolate if you want to keep the recipe sugar free) •1/3 cup coconut oil •1/2 cup chocolate protein powder (I like Truvani Organic Chocolate Plant Based Protein Powder) •1/8-1/4 tsp peppermint extract (depending how strong you want it) •crushed peppermint candy (optional) Instructions: 1. Combine the chocolate and coconut oil and heat in the microwave or on the stovetop using the double boiler method, stirring every 30 seconds until melted. 2. Once melted remove from the heat and add in the protein powder and peppermint extract. mix well until smooth (a fork or whisk works well to mix). 3. Pour the mixture into an 8x5 loaf pan lined with parchment paper and sprinkle with crushed peppermint candy (optional). 4. Place in the fridge for at least an hour, or until set. Once set, remove from the fridge, slice, and serve! See notes below for details. Notes: •For firmer fudge, enjoy straight from the fridge. For fudgier fudge, let it sit out for 30-60 minutes before slicing and serving. •candy canes are optional — this peppermint fudge is delicious without any crushed peppermint candy! #fudge #chocolatefudge #chocolatepeppermint #highprotein #proteindessert #peppermintfudge #glutenfreedessert #dairyfreedessert #refinedsugarfree #sugarfreedessert #ketofudge #paleodessert
