I have used water color before in grout! Idk how to really explain it, but the colors won’t be as saturated as you expect. Like I used artist grade watercolors and they were pretty dull.

I accidentally got wood stain all over a mosaic piece and it stains the grout pretty well without ruining the tiles🥲I used acrylic paint to fix it, it works well too if you wipe the tiles as you go

I don’t know if you’d get this much saturation with watercolour on grout as so much would seep in, I’d definitely look into gouache too which is also water based thoughhh 👀

I was gonna suggest alcohol inks! I'm not sure what they would do to the white tiles though, you'd have to do a little test first! But it would be more saturated than watercolor!
