Sun-Dried Tomato Pesto & Cherry Tomato Rigatoni The moment I tasted the sun-dried tomato pesto from @Colavita, I knew I had to make pasta with it. This dish is vibrant, full of flavor, and exactly what I crave when I’m in the mood for Italian food. Their Roman Rigatoni pasta pairs perfectly with the sauce, and the burrata on top takes it to the next level. Find the full recipe below! Ingredients: 8 ounces Colavita Roman Rigatoni Pasta 3/4 to 1 cup grated Parmesan cheese (reserve some for garnish) 3 garlic cloves, finely chopped or minced 1/4 cup white wine 2 shallots, finely chopped 2 teaspoons black pepper Kosher salt, to taste 1 teaspoon red pepper flakes (optional) 4 to 6 tablespoons Colavita Premium Italian Extra Virgin Olive Oil 1 (13.76-ounce) can Colavita Organic Cherry Tomatoes 2 to 3 tablespoons Colavita Sun-Dried Tomato Pesto in Extra Virgin Olive Oil 6 to 8 fresh basil leaves For Serving: 1 burrata cheese Colavita Basilolio Basil Extra Virgin Olive Oil, to taste Red pepper flakes, to taste (optional) Chopped fresh parsley (optional) Instructions: 1. Heat a large skillet over medium heat and add 4 tablespoons of Colavita Extra Virgin Olive Oil. Add the chopped shallots and sauté for 1 to 2 minutes, until fragrant. 2. Add the Colavita Organic Cherry Tomatoes and minced garlic to the skillet, stirring to combine. Pour in the white wine and cook for 6 to 8 minutes, stirring occasionally, until the tomatoes are soft. **Optional: For a smoother texture, gently peel off the tomato skins using tongs. 3. Season the tomato mixture with kosher salt, black pepper, and red pepper flakes, if using. 4. Meanwhile, bring a large pot of water to a boil and add 1 tablespoon of salt. Cook the rigatoni according to the package instructions until al dente. Reserve 1 1/2 cups of pasta water before draining, and set the pasta aside. 5. Add the cooked pasta to the skillet and toss to coat in the tomato mixture. 6. Add 1/4 cup of grated Parmesan cheese and about 1/4 cup of the reserved pasta water to the skillet. Mix until the cheese melts and creates a creamy sauce. Gradually add more Parmesan and pasta water, as needed, to reach your desired consistency. 7. Stir in the Colavita Sun-Dried Tomato Pesto and fresh basil leaves, mixing well. 8. Serve the pasta warm with a whole burrata on top. Gently open the burrata and garnish with red pepper flakes, a drizzle of Colavita Basilolio, parsley, and extra Parmesan. **Tip: If a whole burrata feels too heavy, split it between two servings.
