I am a professional chef, and in the industry it’s very common to replace your bread knife every year. They are incredibly tedious to sharpen so it’s common just to buy a new one to replace it

I used to have one of those, but I lost it in the divorce. It’s like a light saber. And very dangerous. Mine had a special guard you put on the blade afterward.

I would highly recommend a meat slicer. They are relatively cheap and slice sourdough so nice.
