The BEST Thanksgiving Sausage & Herb Stuffing 🤩 Do you call it stuffing or dressing? This recipe is incredible, especially with the sausage, mushrooms, and tons of fresh herbs! Don’t want to add sausage or mushrooms? Skip them! Tip: make sure to toast your bread first for the perfect crunchy outside and soft inside. If you don’t have time to toast your bread, just make sure you’re using stale bread. Here’s how I made it: - 1.5 loaves French bread, stale and/or toasted (1lb) - 1lb sausage - 1 stick butter (1/2 cup) - 5 oz porteballo mushrooms, finely diced - 1 large onion, diced - 4-5 stalks celery, to taste - Salt and pepper to taste (I did 2t salt and 1.5t pepper) - 1/2 cup dry white wine (optional) - 10 cloves minced garlic, to taste - 1/4 cup fresh parsley - 2 T fresh rosemary - 2 T fresh thyme - 2 T fresh sage - 2 cups chicken broth - 2 large eggs 1. Preheat oven to 350F. Rip apart your bread into 1” pieces. Layer on a baking sheet and toast for about 15minutes. Place in a very large mixing bowl and set aside. 2. In a large dutch oven, heat a touch of olive oil over medium high heat. Add in your sausage and let cook undisturbed for a few minutes. Try to get a nice brown crust on all sides, then break apart. Once no longer pink, remove and set aside. 3. To the same pan, add in your butter and melt over medium heat. Add in your mushroom, onion, celery, salt, pepper. Cook for about 10-12 minutes, scraping up the brown bits. 4. Add in your wine and cook for another few of minutes, until reduced by half. Lower heat, add in your garlic, fresh herbs, and cooked sausage, cook for another minute. Pour half of your broth and stir. Remove from heat and let it cool slightly. 5. Pour the mixture over your bread and toss to coat (in my case I had to add the bread into my pot, the bowl wasn’t big enough). 6. In a separate bowl, whisk your eggs and remaining 1 cup broth. Add to your mixture and toss to coat. Taste and add more salt or pepper, if needed. 7. Bake for an hour or until nice and golden.
