Everything I ate today while attempting to see if I can stretch $100 to buy my groceries for an entire month. I had a couple of overripe bananas to use so I made baked oatmeal.  This was 3 bananas, 2 eggs, 1 cup of milk, 2 packets of maple oatmeal and 1 cup of plain oats.  That got poured into a greased 9 x 9 baking dish and baked at 350 degrees for 30 minutes.  This makes 4 servings and it’s quite filling For lunch I had a grilled cheese sandwich with tomato soup.  I was going to have some pineapple with that but this pineapple unfortunately was not good.  So I did end up having to go back to the store for a refund. Then for dinner I cut up some carrots, potatoes and onions which I tossed in oil, salt, pepper and some garlic & herb seasoning mix I got from Dollar Tree.  I did the same with some chicken thighs and drumsticks and I arranged the chicken on top of the vegetables.  This got baked at 400 degrees for 1 hour.  While that baked I chopped and seasoned some brussell sprouts, and when the chicken had 20 minutes left on it, those went in the oven as well. A couple of things that I did to potentially make things go further is that I am saving all of my vegetable scraps and bones for making a stock or a soup.  I also took this 1 lb of cheese and I cut into 16 cubes so that I know exactly how much I can use to make sure it lasts me the longest.  I made my own butter spread by whipping some room temperature butter with oil.  And I am setting aside 1 to 2 servings of each meal to go in the freezer so that when I do run out of money, I have options to choose from. #whatieatinaday #everythingicooked #budgetmeals #budgetgroceryweek #howtoeatforcheap #extremebudgetmeals
