Smothered chicken sandwiches is so good and pretty easy to make! Recipe 1/4 tsp salt 1/2 tsp pepper 1 tsp each of onion powder and smoked paprika 1 pound of chicken breast Marinade 1/2 cup low sodium soy sauce 1 TBSP lemon juice 1 TBSP Worcestershire sauce 1 TBSP Olive oil 1 1/2 TBSP minced garlic Toppings 4 tbsp of butter (To cook mushrooms, onions, and chicken in) 1 onion sliced (Seasoned to taste with SPG) 1 8 oz container of mushroom sliced Sliced Swiss 4 buns + mayo Directions: Season your chicken on both sides with salt, pepper, onion powder and smoked paprika. Mix together your marinade and pour it over the chicken. That goes into the fridge for a couple hours, or until you lose patience. Get your skillet over medium heat and add in a tablespoon of butter to cook your sliced onion and mushrooms in. Season the onions and mushrooms with salt, pepper, and garlic powder. Let that cook until they are cooked down. Remove them from the pan and set aside. Melt the remaining two tablespoons of butter and cook your chicken until golden brown and to an internal temp of 165 degrees. Top the cooked chicken with your mushrooms, onions, and a slice of Swiss cheese. Place the skillet over smothered chicken in the oven at 400 degrees just until the cheese is melted.
