I also like to refrigerate my cookies for a short blast for an extra boost of flavours 😋 P.S. These cookies pair wonderfully with a hot cup of Milo or teh tarik – a cozy treat for our tropical Christmas vibes 🎅🌴 Make a batch and impress your friends at the next potluck or office party – they’ll thank you for it! Cup measurements / written recipe in blog too! Ingredients - 125g butter - 125g brown sugar - 1 egg yolk (you can use the whole egg if doubling recipe) - 45ml flavourless vegetable oil, such as canola or sunflower - 1/2 tsp vanilla - 200g plain flour - 1/2 tsp (2g) baking powder - 1/2 tsp (3g) baking soda - 150g dark chocolate chips - At least 300g of your favourite spread, mine is Bonne Manam! Steps 1. Place the spread in the freezer for an hour to solidify for easier scooping later! 2. Cream together butter and brown sugar. Then whisk in egg and vanilla until single consistency, before whisking in vegetable oil. 3. Fold in plain flour, baking powder and baking soda and chocolate chips. Refrigerate batter for 30 mins. 4. Place 1 tbspn of cookie dough as the first layer, followed by a 1 tbspn layer of spread, and then finish off with another layer of 1 tbsp cookie dough. Roll to ensure the spread won’t leak, and flatten slightly on parchment paper. 5. Bake at 180C for 10 - 12 mins till golden brown, do not overbake or the spread will be less gooey! 6.
