Loaded potato soup with garlic butter soft pretzels ๐Ÿ‚๐Ÿง€๐Ÿฅ”๐Ÿฅจ Full recipe below!  - 7 slices thick cut bacon, diced  - 5 russet potatoes, peeled and diced  - 1 whole large yellow onion, diced - 1/2 cup green onion, sliced (white half for sautee, green half add at the end)  - 6 garlic cloves, minced - 3 cups chicken stock - 1 cup milk - 1 1/3 cups heavy cream - 1/4 cup all purpose flour - 4 tbsp butter - 1/2 tbsp chicken bouillon base (optional) - 1/2 tbsp roasted garlic base (optional) - 2/3 cup sharp cheddar cheese (add more or less) - 1/2 tbsp all purpose seasoning - 1 tsp smoked paprika  - 1 tsp garlic powder - 1 tsp onion powder  - 1 tsp salt  - black pepper (add desired amount)  Instructions  - In a large pot, on medium heat add diced bacon and cook until done. Remove bacon from pot, discard some of the bacon grease. Add the diced green and yellow onion and sautรฉ for about 5 minutes, until softened. Stir in the minced garlic and cook for an additional minute. - Add butter melt in down then add flour, whisk and allow it to thicken up creating a roux. -  Add chicken stock, chicken bouillon paste, mix then add in milk and heavy cream and mix. Add seasonings, mix again until combined. Allow to come to a slight boil before adding potatoes  - Add the diced potatoes to the pot, then reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
