Karaage Siopao Sandwich Ingredients: Chicken & Buns: * 2 lbs skinless, boneless chicken thighs * Siopao or brioche buns Marinade: * 4 Tbsp sake * 4 tsp sugar * 3 Tbsp soy sauce * 1 Tbsp ginger paste * 5 garlic cloves, grated * Zest of 1 lemon Batter: * 1 egg * 2/3 cup potato starch * 1/4 cup water Coating: * Potato starch Karaage Sauce (IB: Straightupeats) : * 2 1/3 Tbsp soy sauce * 2 Tbsp rice vinegar * 4 Tbsp mirin * 1 Tbsp sesame oil * 1/2 tsp kosher salt * 2 tsp sugar * 1 tsp cornstarch + 1 tsp water (slurry) * 2 Tbsp chopped chives Instructions: 1. Marinate: Mix marinade ingredients. Pound chicken thighs thin and marinate for 30–60 minutes. 2. Prepare Sauce: Simmer sauce ingredients for 3 minutes to cook off alcohol. Stir in cornstarch slurry to thicken. Once cooled, mix in chives. 3. Make Batter: Whisk egg, potato starch, and water. 4. Coat & Fry: Dip marinated chicken in batter, then dredge in potato starch. Fry at 320°F for 2 minutes. Increase to 350°F and fry for another 3–4 minutes until crispy. Drizzle with sauce. 5. Assemble: Toast buns for 1–2 minutes. Spread Kewpie mayo on the bottom, place fried chicken on top, add cilantro (optional), then cap with the top bun. 6.
