The stock from the roast beef a few nights back and a chunk of Comté cheese gave birth to a quite delicious hybrid of a risotto based on a French onion soup. I roasted Jerusalem artichokes until crispy to add extra interest, and threw hazelnuts on top for some texture and bitterness – working together with the sprout tops as a foil for the obscene, wine-soaked richness of the risotto.
