the reason we are concerned about (highly processed) seed oils is because they are more subject to oxidation at average heat levels according to some studies, ROS via the Maillard reaction

The seed oil thing is so weird to me as a Bulgarian. Our whole country of 7 Million people use sunflower oil on a daily basis for not just frying but everything from pastries to salads. WE'RE FINE

this is why I use rosemary on things I airfry (the only way I fry thangs). its been found to reduce acrylamide levels by up to 60%. I try to do fried 4x a month max.

highly saturated fats make crispier textures in frying and less greasy feel. also food science is very unreliable at finding what types of fat etc are healthy, this field loved margarine till recently

Also the biggest thing with seed oils is that it’s high in omega 6s which gives you an improper ratio of omega 6:3, which leads to inflammation. Increasing your omega 3s by eating fish balances it out
