@louisethompson: I am ALWAYS asked about my pancakes. I make these for my fam most mornings. They are quick and easy and healthy and they fill you up. I like to cook them in lashings of butter to make them even more sumptuous. I often add bananas and blackberries too. Sometimes peanut butter and a smidge of honey. The one thing i'd say is go easy easy on the kefir. Literally only add a tiny splash or the consistency changes and they're really hard to flip. Quite nice to add things like yoghurt, bacon or honey afterwards once cooked. I feel like they're a handy prebiotic (great for me given that I've come off a 6 week course of anti b's (becoming a little too standard)... My belief is that a prebiotic food is a food that contains fibers and natural sugars that help good bacteria grow in the gut. Prebiotics work with probiotics, which are healthy bacteria or yeasts, to improve health. Obviously if you've got any gut issues consult a doc or dietician before trying new things.
