Raspberry cheesecake crumb bars🍰✨                                                                                Recipe:                                                          Ingredients Raspberry Jam:  *you can use store-bought jam!* -1 1/2 cups raspberries (fresh or frozen) (180g) -1/3 cup granulated sugar (66g) -1 tsp lemon juice -1/2 Tbsp cornstarch + 1 Tbsp water Crumb: -1 1/2 cups all-purpose flour (180g) -3/4 tsp baking soda  -1/2 tsp salt  -3/4 cup unsalted butter, softened (170g) -2/3 cup granulated sugar (132g) -3/4 cup light brown sugar (159g) -1 1/3 cups quick oats (132g) Cream Cheese Filling: -8oz cream cheese, softened (226g) -14oz sweetened condensed milk (397g) -2 tsp vanilla  -1 egg yolk  Instructions Raspberry Jam:  1. In a small bowl combine 1/2 Tbsp cornstarch + 1 Tbsp water and set aside. 2. In a medium saucepan add the raspberries, sugar, and lemon juice. Give it a mix and bring to a boil. Turn down heat and let it simmer for about 10 minutes, stirring frequently. 3. Add cornstarch mixture and mix. Take it off the heat to cool. Crumb: 1. Preheat oven to 350°F and grease an 8-inch square baking pan. 2. In a small bowl whisk together flour, baking soda, and salt. Set aside. 3. In a large bowl beat the butter, granulated sugar, and light brown sugar until light and fluffy.  4. With a spatula mix in the dry ingredients and quick oats.  5. Add a little more than half of the crumb mix to your prepared baking pan and press down to flatten. 6. Bake for 13 minutes.  Cream Cheese Filling: 1. In a medium bowl beat the cream cheese until smooth and creamy. 2. Add the sweetened condensed milk and mix until combined. (*Don’t add it all if you prefer less sweet*)  3. Add egg yolk and vanilla. Mix until well combined.  Assemble: 1. Pour the cream cheese filling over the baked crumb layer.  2. Add dollops of raspberry jam all over and with a toothpick gently swirl it around. 3. Sprinkle the rest of the crumb mix all over. 4. Bake for 22-25 minutes.
