I would not recommend closing the lid to get it to temp, as it can cause condensation, and water and hot oil are not friendly

I’ve bought one of these before. I have a black one and I love it when I make tempura or katsu. A little tip if u put a piece of parchment paper in the back of the grate you don’t have too much mess
