Meal Prep: 3 Chicken Marinades I get asked a lot about meal prep, so I’m sharing 3 of my current favourite chicken marinades! These are super easy to make and they’ve been a game-changer for weeknight dinners. For this, 600g of chicken serves 4 people, each getting at least 35g of protein per serving. I usually split this into 6 bags with 300g of chicken per bag, perfect for serving 2 people each. You can adjust based on how many you’re prepping for. Pepe’s Style Chicken: * 600g chicken breast or thighs * 2 tbsp yogurt * 2 tsp garlic ginger paste * 1 tbsp oil * Juice of 1/2 lemon * 1.5 tbsp tomato puree * 2 tsp red Kashmiri chili powder* * 1 tsp paprika * 1 tsp onion powder * 1 tsp ground cumin * 1 tsp ground coriander * 1 tsp oregano * 1 tsp salt (or to taste) Greek Chicken: * 600g chicken breast or thighs * 4 tbsp olive oil * 2 tbsp Greek yogurt * 2 tsp garlic paste (or 4 cloves) * Juice of 1 lemon * 2 tsp oregano * 1 tsp paprika * 1 tsp salt (or to taste) * 1/2 tsp black pepper * 1 tsp garlic granules (optional) Hariyali Chicken Tikka: * 600g chicken breast or thighs * 3 tbsp yogurt * 1 cup fresh coriander * 8-9 fresh mint leaves * 1-2 green chilies** * 3 cloves garlic * Juice of 1/2 lemon * 1 tsp ground cumin * 1 tsp ground coriander * 1 tsp salt (or to taste) I marinate the chicken for 6 hours or overnight in the fridge, for maximum flavour, then freeze them flat for easy defrosting later. When it’s time to cook, you can pan-fry, air-fry, or oven-bake. My favorite combos: * Hariyali Chicken Tikka on naan or either rice and raita/salad or in a wrap. * Pepe’s Style Chicken in a rice bowl with garlic sauce, or a wrap. * Greek Chicken goes with just about anything — skewers over rice, in gyros, on naan, or stuffed in a pita. Having these ready to go in the freezer makes mealtimes a breeze on busy days, helps me stick to my protein goals, and keeps takeout at bay! *Note: Kashmiri chili powder is mild but gives great color. If using regular chili powder, cut it to 1 tsp
**Adjust the number of green chilies based on your spice tolerance! #mealprep #chickenmarinade #chicken #marinade #protein #Ramadan #food #EasyRecipes #dinnerprep
