The perfect date night dinner for two (or if you’re single like me, dinner and then breakfast 😂) #Recipe #risotto #cooking • • Risotto with Broccoli Rabe and Shiitakes Ingredients: 4 cups vegetable stock 3 tablespoons olive oil, divided 2 cups thinly sliced shiitake mushrooms  1 shallot, minced 1 cup Arborio rice 3 garlic cloves, minced Kosher salt and freshly ground pepper 1/4 cup dry white wine 2 cups chopped broccoli rabe 1/2 cup freshly grated Parmesan cheese, plus more for serving  2 tablespoons cold unsalted butter 1 lemon, zested  Directions: 1. Cover and heat vegetable stock over a low flame. 2. Heat a dutch oven over medium high heat and add 2 tablespoons oil. Once shimmering, add shiitakes in a single layer (you may need to do two batches). Cook until crisp and brown. Remove and place on a paper towel-lined plate and set aside. 3. In the same pot over medium low heat, add the remaining tablespoon of olive oil and shallot. Saute, stirring often, until softened. Add rice, and saute until rice is toasted, 2-3 minutes. Add garlic and season everything with salt and pepper, and cook for another 30 seconds. Increase heat to medium high and deglaze pot with wine, scraping any browned bits from the bottom of the pot. Once wine is nearly cooked off, add about 1 cup stock, stirring constantly until it’s absorbed into the rice. Repeat this process 2 more times, until about a cup of stock remains. Add broccoli rabe to stock and cover to par-cook for a few minutes while you stir the rice. 4. Taste rice for doneness, then add more stock if needed. If not, remove from heat and use a slotted spoon to add the broccoli rabe and mushrooms. Stir to combine, then add cheese and stir until melted. Add butter and stir until melted. Add lemon zest and stir to combine.
