In a medium bowl, whisk together the eggs, milk, and salt to make the egg wash. 3. In a separate bowl, combine the flour, paprika, garlic powder, black pepper, cayenne pepper, and salt. 4. Coat each mozzarella stick piece in the seasoned flour mixture, making sure it is fully covered. 5. Dip the floured mozzarella sticks into the egg wash, then coat them in breadcrumbs. 6. For extra crispy mozzarella fries, repeat the full coating process a second time: dip the mozzarella sticks back into the seasoned flour, then into the egg wash, and finally into the breadcrumbs again. 7. Place the coated mozzarella fries onto a tray or plate and freeze for at least 1 hour. Freezing helps prevent the mozzarella sticks from bursting while frying. 8. Heat oil in a deep pan or fryer to 180°C (350°F). 9. Fry the mozzarella fries in batches for 1–2 minutes, or until the mozzarella stick coating is golden brown and crispy. Do not overcook, as the cheese inside the mozzarella sticks can melt too quickly and burst open. 10. Remove the crispy mozzarella fries with a slotted spoon and place them on paper towels to drain excess oil. 11. Serve the mozzarella stick fries immediately with marinara sauce, garlic mayo, ranch, or your favourite dipping sauce.
