Reindeer also have hollow fur which traps air. Because of this their fur acts as a life jacket meaning they don't sink, making them amazing swimmers

The tongue could be dietary (much like how flamingos are pink from diet), or to deal with windchill, sunburn etc. I dunno though, those are just the first (probably wrong) ideas to come to mind.
