 4 ounces of mixed greens
 2 cups of cooked long-grain rice
 1/2 lime (plus zest)
 1 cup of chopped tomatoes
 1 cup of frozen corn (thawed)
 15 ounces Bush’s Southwest Zest Sidekick Beans
 1.5 pounds of chicken breast tenders
 1/3 cup of fresh-squeezed orange juice
 1 tablespoon of chili powder
 3 cloves of minced garlic
 1 tablespoon of soy sauce
 2 tablespoons of olive oil
 Juice of 1/2 a lime
 1 tablespoon of honey
 3 tablespoons of cilantro
 1/2 teaspoon of kosher salt and 1/2 teaspoon of black pepper
 Dressing  1/2 cup of full-fat Greek yogurt
 Juice of 1 lime
 1 clove of garlic
 1 cup of cilantro
 1/4 cup of olive oil Salt and pepper to taste
 Directions:
 1.	To make the dressing, blend all dressing ingredients in a small blender until smooth.
 2.	For the chicken marinade, add orange juice, chili powder, minced garlic, soy sauce, olive oil, lime juice, honey, cilantro, salt, and black pepper to a bowl. Whisk together and pour over chicken. Mix until chicken is completely covered in marinade. Cover and refrigerate for at least 30 minutes.
 3.	Cook the rice according to package instructions. Once cooked, add juice of half a lime, lime zest, and cilantro. Mix by fluffing with a fork.
 4.	In a pan on medium-high heat, add olive oil. Cook the chicken for 3-4 minutes, flip, and cook for an additional 3-4 minutes or until juices run clear and chicken is cooked. Set aside to rest while you put together the salad.
 5.	In a large bowl, add mixed greens, tomatoes, corn, beans, rice, and cooked chicken. Add the dressing and toss together.
