Follow for more healthy comfort food recipes  I found these gorgeous mini eggplants and you know baby-size anything is too adorable not to grab some.  Roasted Eggplant Marinara Fans  Preheat oven to 400-425 F  Pour tomato sauce or your favorite marinara in a shallow baking dish. Add some water so it comes up to at least an inch thick bath for your eggplants. I used the spicy one from @pizzagirl because i’m obsessed with it. Slice eggplant into fans, and add sliced tomatoes within the slits. Add some crumbled feta, or any cheese you like in there as well as some on top. Add tons of sliced garlic, a small drizzle of olive oil, and sprinkle of onion powder, salt, pepper, oregano, dried basil, and/or herbs de provence (i love it). Cover and cook for about 35-45 minutes until the eggplants are nice and tender. Top with more cheese if you desire and enjoy!
