Why would you do that brand guidline in illustrator and not indesign? I think it is much more comfortable for layouting than illustrator.

But you can’t use the rgb > cmyk 🫠 you have to to it with the correct profile and change it manually to get a better result

I have yet to come across a brand guidline that is in the correct color profile for the values to register right. CMYK profiles vary wildly as do RGB profiles, the only reliable is the hex code, that should always be in sRGB.
