Creamy Chicken & Prawn Curry  The perfect meal for Durbans cold weather. I've always removed the shells from the prawns before cooking, but this time I decided to leave it on. Now, I don't think I'll cook it any other way! Ingredients :  4 tbsp butter 1/4 oil 1 tspn methis seeds 3/4 tspn cumin seeds 3/4 tspn fennel seeds 3/4 tspn mustard seeds 1 cinnamon stick  1 bay leaf 1 onion (chopped) 2 tbsp garlic 1 sprig curry leaves (chopped) 1 tspn turmeric 3.5 tspn kashmiri masala  3/4 tspn jeera powder 1 ta0n coriander powder 2 large tomatoes (preferably grated) 2.5 tbsp tomato paste 2 chicken breasts cubed  800g large prawns  Salt to taste  1 tbsp sugar Chopped coriander 2 tspn kasuri methi 1/2 cup coconut cream/cream  Garnish with coriander Method :  1. Sauté the whole spices in butter and oil.  2. Once the onions are softened, add the curry leaves and garlic. Fry until the garlic no longer smells raw.  3. Add the powdered spices and cook for about 2 minutes on medium heat.  4. Then add the tomatoes and water. Allow these to cook on medium heat until the tomatoes are fully cooked and there isn't much water. Season with salt and sugar. 5. You can now add the chicken which takes a little longer to cook than the prawns. Both will release water which will dry out as it cooks. Add the prawns with the chopped coriander. It will cook in 5 minutes. Prawns should not fully curl into a circle. (They're overcooked if they do) 6. Add some lime juice and let it cook for a few minutes before adding the cream.  7. The cream must be added on low heat.  8. Finish with some kasuri methi. This adds an umami flavour to the food.  9. Garnish with coriander.
