Gradually add the smoked Gouda cheese to the grits and continue stirring until the cheese is fully melted and the grits are rich and creamy.   Taste the grits and season with salt as needed. Remember that the cheese adds some saltiness, so be careful not to oversalt.   Cook the grits for a couple more minutes to ensure everything is well combined and heated through.
