Daal with Coconut Cream Vegetables - 1 cup split red lentils - 1 can (160ml) coconut cream - 2 cups vegetable broth or water - 1 cup mixed frozen vegetables (e.g., peas, carrots, corn, and green beans) - 1 medium onion, finely chopped - 3 cloves garlic, minced - 1-inch piece of ginger, grated - 2 tbsp vegetable oil or ghee - 1 tsp cumin seeds - 1 tsp mustard seeds - 1 tsp turmeric powder - 1 tsp ground cumin - 1 tsp ground coriander - 1 tsp garam masala - 1/2 tsp red chili powder (adjust to taste) - Salt to taste - squeeze of lemon juice 1. Rinse the split red lentils thoroughly under cold water until the water runs clear. Drain and set aside. 2. n a large pot, heat the vegetable oil or ghee over medium heat. Add the cumin seeds and mustard seeds. Once they start to splutter, add the chopped onion. Sauté until the onion becomes golden brown. 3. Add the minced garlic and grated ginger. Sauté for another minute until fragrant. 4. Add the turmeric powder, ground cumin, ground coriander, red chili powder, and garam masala. Stir well and cook for about 1 minute.  5. Add the rinsed lentils to the pot and stir to coat them with the spice mixture. Pour in the vegetable broth or water and bring the mixture to a boil. 6. Reduce the heat to low, cover the pot, and let the lentils simmer for about 15 minutes, or until they are soft and fully cooked. Stir occasionally to prevent sticking. 7. Once the lentils are cooked, add the coconut cream and mixed frozen vegetables. Stir well and let the daal simmer for another 5-10 minutes, or until the vegetables are heated through and tender. Adjust the consistency with more broth or water if needed. 8. I made a quick tadka to add an extra layer of flavour - heat 2tbsp of ghee in a small pan, and add 1 tbsp of chopped garlic a pinch of cumin seeds, mustards seeds and a large pinch of asoefitida, let this sizzle, if you like it spicy add some chopped green chillis to this tadka, once its all a light brown colour add this ghee to the pot of daal. Give the daal a squeeze of lemon, and give it taste before serving. 9. Enjoy hot with topping of crispy paneer croutons, like me :)
