Cheesemaker here! True ricotta does use whey, but you can make it with milk & lemon juice/citric acid- end result = ricotta. Cottage cheese uses milk & heavy cream to make it creamier & isn’t cooked

Ricotta made at home is the same recipe as you used but they add a qt of heavy whipping cream making it milder and smaller curds.

They are wrong. Ricotta literally means “recooked”. The whey (leftover from making cheese) is “recooked” to make ricotta. Keep doing your thing! ♥️

Yummy either way! You made Ricotta. Cottage cheese is made with cultures and rennet (traditionally) and is “cooked” to make the smaller curds.
