✨viral smashed potato salad✨ you’ll need: 1.5 lbs baby potatoes Olive oil to drizzle 1/4 tsp each: salt, garlic powder and paprika 1/4 cup low fat or reg mayo 2/3 cup greek yogurt 2 cloves garlic 2 tbsp lime juice 1 tbsp water 2-3 chipotles in adobo sauce (I also added some of the onions that are in the can) 1 cup diced red pepper 1/2 cup diced red onion 1 cup cilantro, finely chopped 1/3 cup finely chopped chives Green onions to garnish Boil potatoes in a large pot until they are fork tender. Drain and add to a lined baking sheet. Gently smash each potato, keeping them as even in height as possible. Drizzle with olive oil and sprinkle with seasonings. Bake in a 425 degree oven for 25 minutes or until golden and crispy, flipping halfway through. In the meantime prep you sauce: in a blender or food processor add mayo, greek yogurt, garlic, lime juice, water and chipotles. Season with salt as needed. Blend well until chipotles are completely blended. Once potatoes are done, add whole ones to a bowl. Reserve any tiny pieces that have remained.
