Spinach Rice 300g Basmati Rice 200g fresh spinach 2 cloves of peeled garlic 1 tbsp oil 3-4 tbsp butter 1/4 tsp turmeric powder 1 star anise 2-3 cloves 1 cardamom pod Salt Lemon 1. Rinse rice until water runs clear and soak in cold water for 30-45 mins 2. Blend the spinach and two cloves of garlic with 100ml of cold water, until a smooth puree forms 3. Boil a large pan of water, add the cloves, star anise, and cardamom and some salt. Bring to the boil 4. Heat a wide pan, add a tbsp of oil and 1 tbsp of butter, once bubbling, add the turmeric powder, and one clove of finely chopped garlic, once sizzling add the pureed spinach, cook on low to medium heat for a few minutes, add another tbsp of butter and juice of half a lemon. Add salt and see how it tastes. 5. While the spinach is heating up, add the soaked rice to the water and boil the rice until it is almost 70% cooked, this can take about 5-7 minutes. Drain all the water and set aside, be sure to drain as much water off as possible 6. Add the drained rice to the spinach and gently fold the green goodness into the rice without mushing too much. Switch off heat. The rice will finish cooking at this point. 7.
